Tannins and acid from the grape and oak barrel effect the overall success of a red wine. Over the months and years the tannins and acids soften, allowing ever-changing aromas and flavors to emerge. This is why it is of the utmost importance to pick our grapes at the ripest moment to achieve that perfect balance.
Cellaring your red wines for a few years can be a great strategy if you wish to maximize your tasting experience. Be sure to lay down your bottles, on their side, so that your wine is always covering your corks to keep them moist. Choose the coolest place in your home or cellar to store your wine. We cellar our Cabernets close to 55˚ F to give them their longest life. Also, a room with a humidity of 50-75% helps prevent your corks from drying out over time.
